Default Low Carb "Hashbrowns" for Breakfast

One consolation for me eating low carb is getting to have a hearty breakfast each morning. I really miss having some kind of starch, so a few years ago I started shredding some cabbage and carmelizing it in bacon drippings in place of hashbrown potatoes. It is especially delicious mixed in with some of the yolk from my fried egg.

I do this, but put it in a bowl and mix in my egg (with runny yolk). It ends up so good my non-LC 12 year old will have it some mornings.

I have done the same thing with zoodles soaked in the egg and then dropped into the coconut oil.

cauliflower chunks cooked in bacon/sausage grease with bell peppers always reminds me of home fries

i am obsessed with this thread- so many great ideas!

my favorite "faux" home fries are jicama hunks with seasoned salt- a little onion with this is nice, too. they are so much like potato, they even taste great with sf catsup.

Hmmm I have only ever had raw jicama. I never thought to cook it. Sounds great Robin!
