Default Lox n Eggs

Here's one of my favorites - and my family's also (even my 5 year old girls like this). This is perfect if you don't like to eat raw salmon.

Get some thinly sliced smoked salmon - it's not really "lox" (although you can get real lox if you want)... I use either "Nova" salmon or wild alaskan salmon. Take out about 1 or 2 ounces per person and throw it into a non-stick frying pan. Take a spatula and break it up into smaller pieces, flipping the bits. It cooks very rapidly - only a minute or two is good. Then pour in the scrambled eggs and cook (stirring with the spatula) until done. If the eggs stick (they tend to stick even in my non-stick pan), add a little butter first.

The smoked salmon is salty, so you don't need to add salt. Pepper is good.

If your diet allows, you can saute some onions in the pan first.

This is awesome nutritionally, awesome tasting, and very easy!
