Very glad not doing low-fat, Meme! We'd all be hungry!

Judy, that recipe looks good for the onion bombs...where do you find LC BBQ sauce, or do you make your own?

Kat

I haven't made this yet but when I do, I'll make my own sauce.
It is a pretty thing to make. I always modify all recipes to work within my restrictions.

In last batch of meatballs that I made, I followed a tip that I'd found in some other recipe and used grated summer squash as a filler instead of the bread crumbs my recipe called for. It actually worked pretty well. My family did ask what the yellow flakes were in the meatballs (it did look a little strange), but they also said that they liked them very much. They were my best meatballs yet. I'd tried almond meal and flax as a filler -- but got a thumbs down from my family on those meatballs.

Ken, thanks for that idea. I'd been thinking about using almond flour, and now I don't have to make an un-tasty meatball or meatloaf.

Thanks, Judy!
I do that too, when looking at recipes I am converting them in my head to see if it's worth the effort...

Ken, good idea - I wouldn't have thought of summer squash. I do crushed pork rinds for bread crumbs usually in stuff like meatloaf.

I add canned tuna to cream cheese before stuffing jalapenos and wrapping with bacon (bake in oven). It don't sound like these ingredients go together...until you try!

There are some great recipes on this thread...
I am cooking this one, right after I go grocery shopping tomorrow.

Cooked up an entire pound of Target's Archers Farms thick cut bacon in the oven yesterday. I made most of it floppy, so it wouldn't get too crisp on reheating.

Having a slice a day along with my scrambled eggs with HWC. I buy the big Kirkland bags of bacon crumbles and throw some of them in the eggs, too. There's no such thing as too much bacon.
