Thumbs up Broccoli Chicken Salad

I whipped this up tonight while trying to come up with something for dinner that would also help clean out my fridge - the results were great, IMHO

BROCCOLI CHICKEN SALAD

2 cups broccoli florets, in bite-size pieces
1 1/2 cups cooked chicken (I had purchased one of those roasted chickens from Safeway), cut/shredded into 1/2 inch pieces
1/2 cup coarsely shredded cheddar
2 stalks celery, finely chopped
4 slices bacon, chopped
1/3 cup mayonnaise
1/3 cup sour cream
1/2 tsp. celery seed
2 Tbsp. apple cider vinegar
1 tsp Dijon mustard
salt, freshly ground pepper to taste

Fry the bacon until crisp. Set on paper towel to drain. Mix together the mayonnaise, sour cream, celery seed, cider vinegar, mustard & salt and pepper. If mixture is too thick (depending on the brands of mayo/sour cream), add more vinegar until the mixture is the consistency of a pourable salad dressing.

In a bowl, combine the broccoli, chicken, cheddar & celery. Add the dressing; toss to combine. Add the bacon & toss lightly.

This made 2 main dish size portions.

Actually, this sounds really good! Hmm, I have all the ingredients on hand, might just have this for lunch Friday

(Um, you wouldn't happen to have a carb count??)

Thanks for moving my recipe, Doreen

I have MasterCook, and I plugged in the ingredients - it comes out to 8 g of carbs per serving, assuming the recipe yields 2 portions.

i should also mention that the fibre content per serving is 3g, so the actual carb content is more like 5g per serving.
