No recipes, but a fascinating look at the Marketing strategy of the InstaPot. Sales have apparently taken off these past six months, since Prime Day sale Nancy put in another thread. I don't do much social media so have missed this trend completely except for seeing recipes on Pinterest.

love ours so much i bought a second one. i'll often make carbs for the family in one, and meat in the other one. or when i have lots of bones, i run them both to make bone broth. totally worth it just for the bone broth. i use it for almost all the meat we cook, too, it makes everything so tender and flavourful. the only exception seems to be ham--we are unthrilled with the way that our hams turn out in the ip, so we bake the ham.

It's a winner. I've been making 2 days plus both broth for almost 2 years now (much of the time the large pot just goes in the oven). My sister gave me one of these for Xmas and I finally got around to using it. Yup, I think I used 3 60 minute sessions and the broth was done to perfection with no constant watching.

I've always said the first broth I made that I was truly happy with was with a pressure cooker. However, that was the "dried-bean-and-rice old days" when the cooker was just too small for bone broths.

Well I am not paying $100 for a pressure cooker, will wait for a sale, though its use for bone broth is intriguing. Would the 6 quart size be good enough? Don't want a behemoth on my counter, and better for smaller roasts?

I bought mine at Walmart on black Friday. It was in the wrong place, so I got it for $ 20. It is not a instant pot but it works the same. Can even use as a slow cooker

Thanks Thud...the broths look great. I make a whole head of cauliflower in the microwave in ten minutes. No utensils messed at all. Besides price, space for another gadget and ease of clean-up come next. but you seem to use yours a lot. I am never happy straining and then cleaning my 6qt crockpot after bone broth. What a mess. Thanks for photos.

how long do you cook the cauli in the ip? i've tried steaming veggies under pressure but they just turned to mush on me.

I can't remember how long to cook it but it's super short using the "steam" function. you just add a little water to cover the bottom and fire it up. Very efficient.

And Janet, cleanup is super easy. The top never get's really a mess and the stainless insert comes out each time for clearning and can be used for other stuff, like soaking napa cabbage for kimchi!

My dh bought me one for Christmas - I had missed this thread and hadn't heard of it.

I love it. Did a 4 pound roast in such a short time, a lemon and chicken and herb recipe in 12 minutes. Never liked my pressure cooker but love this - the ability to make yogurt, saute etc etc., it's working well for us.

Made a wonderful low carb shredded pork in it last week. I've many more recipes to try, but so far, love the ones by nom nom paleo.

I just got myself an IP on Amazon Prime day. I'm not really in the groove of cooking hot food right now, but I've played with it and so far, I love it.

Favourite things about it:

- Being able to cook without so much odor permeating the house. We don't have central heat/AC, and usually when I cook, the whole house reeks even the next morning. It's kind of gross to wake up to. (Bacon and overnight crock pot bone broth, I'm looking at you. I love bacon as much as the next person but the remnant smell the next day is not appealing to me.)
- It really didn't seem to heat up the kitchen much at all.
- Speed. I will love this in fall when I'm back to work and not getting home until after 7:00 pm.
- Corrollary: faster = less electricity = saving money.
- Fewer dishes - I can sautee in the IP so I'll be looking at a lot of one-pot meals. (I don't have a dishwasher.)
- Space - I've now demoted my yogurt maker, Egg Genie, slow cooker and rice cooker to the basement. I'll be giving them away, except maybe for the slow cooker. My kitchen is tiny and this makes me very happy.
