Chocolate Covered Macaroons- ginger orange variation
I was looking for a way to get more coconut oil in my diet, and i came up this (inspired by several macaroon recipes floating around the net, but the chocolate coating was my idea, i think! i am sure others have done this before).
2 eggs
3/4c coconut shreds
6 packets splenda
fresh ginger (I use the kind in the fridge tube)- optional- used a big squeeze?
6 tbsp coconut oil
6 packets splenda
2 tbsp cocoa powder
optional flavor extract- i used orange, but you could do coconut, vanilla, raspberry, almond.....
preheat oven to 350
beat eggs (I am lazy and leave the yolk in)
stir in 6 spenda packets, coconut and ginger if you are using it
bake for about 20 minutes in lined 6 muffin tin
stir together remaining splenda, oil, extract, and cocoa. after macaroons bake, distribute oil evenly over them. freeze for 10 minutes until oil hardens into "magic shell." store in fridge.
each giant macaroon has:
230 kcal
4 net carbs
1g protein
22.5 g fat
yummmmmmmmmmm.
