Talking OATMEAL BANANA BREAD for NHE/TKD/CARB CYCLING PROGRAMS!

Hi everyone,
So me and my training partner got reaaaaaalllllyyyyy sick of eating oatmeal and bananas twice a week for carb ups. I got a little creative last night and modified a banana bread recipe which ended up being really really good....So, for all of you who are doing a program with carb-ups, here is a recipe that will satisfy your required oatmeal, banana needs without eating another bowl of sludge!!

Low Fat Oatmeal Banana Bread

Pre-heat oven to 350 degrees, "pam" a loaf pan, or an 8x8 cake pan.

2 cups oat flour (toss 2 cups of oatmeal in a blender or food processor to make the oat flour)
1 tsp baking soda
1/4 tsp salt

Mix above ingreadients, and set aside.

Then, cream:

1/4 cup light butter (use one that is ok for baking-- some aren't)
1/4 cup applesauce or pureed prunes
3/4 cup brown sugar

Add to creamed mixture:

2 1/3 cups mashed older bananas (if you can`t wait for old bananas, or just dont want to mash the bananas, use banana baby-food)
2 beaten eggs OR eggbeaters OR 4oz egg-whites

Add mixed wet ingredients to oatflour mixture just until everything is mixed in-- don`t beat it to death!!

Pour batter into greased pan and bake at 350 for 60-65 minutes until testing fork comes out of the middle clean.

Let it sit for 10 minutes or so and dig in!! I thought it tasted especially yummy with fat free cream cheese.
