Default Sesame or Peanut Noodles

Made an excellent adaptation of a Mark Bittman recipe:

Cold Peanut or Sesame Noodles

1/2 C Peanut butter or tahini
3T soy sauce (or coconut aminos)
1T rice vinegar
2T toasted sesame oil
1/2 tsp black pepper
1 tsp hot sauce
1 tsp grated ginger root
2T sugar equivalent (I used 6 drops of Sweetzfree)
1 medium zucchini grated fine
16 oz shiritaki noodles
1/4 C minced scallion or onion
1/4 C minced cilantro

rinse and cut the noodles into manageable lengths. bring a pot of water to a boil, add noodles and boil for 1 minute. drain.

Mix 1st 7 ingredients in a bowl. Add shitataki noodles and zucchini and mix. Add onion and cilantro and mix.

2-4 servings. Top with your favorite protein (shrimp, tofu, chicken breast, flaked fish). I used seared tuna.

i have made almost the same recipe- i love it!

i used crushed red pepper instead of black
and cucumber slices instead of zuchinni

love the tahini variation- will have try it soon

I had another portion of these noodles for dinner tonight, with 5 oz shrimp. This recipe it is so rich, it really is four servings for me. This totally saved me: I was ready to go out for thai rice noodles, but had this instead. it was as good today as it was two days ago.
