Default creamy bacon chicken in crockpot

someone posted this on facebook and as long as you do the gluten free version, it should be low carb, minus the potatoes or rice.

Creamy Bacon Crock Pot Chicken

Prep time: 10 mins {this is an awesome prep time – can’t beat just 10 minutes in the morning!}
Cook time: 6 hours

Serves: 6
Ingredients

6 chicken breasts
6 slices center cut bacon {renders just enough fat}
2 cans cream of chicken soup
1 cup sour cream
**** Gluten Free Option**** substitute 1½ cups chicken broth with 1½ cups heavy cream for cream of chicken soup.

Instructions

Fry bacon in a pan ¾ of the way so that it’s still pliable. Drain on paper towel lined plate.
Add cream of chicken soup and sour cream into bacon pan {in the renderings} and mix.
Wrap chicken with bacon and place in slow cooker.
Add gravy over top, cover and cook for 6 hours.

This sounds pretty yummy but think I will try it with boneless thighs instead. Almost like a chicken version of stroganoff, I bet mushrooms, wine, and scallions would really highlight the meats and add depth to the creaminess. Thank you for posting, it's on the menu for this coming week

no on the creamy chicken soup, that's why i specified to do the gluten free version

This sounds good, and I'm going to try it in my new cuisinart electric pressure cooker, which i am just in love with.
