Default Bone Broth Question

Hi. We've made beef bone broth several times but with the knuckle bones. I have some larger bones from a butcher shop -- these can't be cut down as the local grocery stores won't cut them as they didn't originate from them.
Anyway they will fit into the crockpt but would a bigger bone make a less hearty bone broth? Perhaps it would be harder to get to the marrow.

Just wondering. Do any of you use bigger bones for your bone broth and they come out ok?

I think it would be fine, when you've boiled a bone for a while you'll see it gets very porous, and any sinews or jount cartilage will tend to fall off. You're probably right that you won't get to eat the marrow, though. Any gelatin from the outside of the bone will still be in the broth.

I use ox tails for my bone broth, and the bones seem to be anywhere from 5-6 cm, maybe even 7, to less than one.
