Thanks for that feedback, Amanda.. We can buy ground almonds here which are very smooth, so I'd probably use those. To be honest, I hate the cloying texture and the flavour of normal brownies, and that's why this recipe appealed to me - it should probably be called something different, such as healthy chocolate & walnut bites, so people aren't expecting the moist brownie experience.
My boyfriend hates stevia and won't touch anything containing it, but I only use a teeny bit in anything for myself alone - just to take away bitterness, so it's not terribly noticeable. I guess any sweetener could be used. However, I am not ready to go back down the caffeine path.. I am just so "over" the all-consuming cravings.
