thanks for this recipe - it is absolutely yummy. Very decadent with a few real strawbs or berries and some cream. I have been adding some SF maple syrup to the topping too. They also freeze fine - I just nuke on in the microwave on low.

Hmmm my brand of powdered stevia says 1/10th of a teaspoon is equivalent to two teaspoons of sugar (sadly I read the container AFTER making rhubarb and strawberry pie with it.. ergh! lol).

Thanks for the cocunut slice recipe! I'll have to give it a go! Where it says "2 cups coconut", is that the fleshy stuff or desicated stuff or something else?!

Desiccated coconut.

I make these differently now. I have a generic almond meal based muffin/cake that I make and I use that recipe as the base for the coconut tart and then add the jam and coconut topping as per the one in this thread. Also I use way less sweetener these days because my taste buds don’t need as much sweet.
