Talking Super Easy Egg Drop Soup

In speaking to the lovely lady at my local Chinese Restaurant, I found that the Egg Drop soup that I thought MUST be low carb was actually pretty high in cornstarch.
No bueno.
I have been sick this week and realllly wanting soup but not just boring broth, so I devised my own quickie egg drop- it took all of 5 minutes and I maaaaay have eaten the whole thing. But it had approx 3-3.5 carbs so I was ok with that

I make this a lot and keep it in the fridge for a light meal when I'm just not really hungry but need to eat.
It is yummy.....and surprisingly satisfying.

I make almost exactly that, only sometimes I also add bok choy or cabbage. Or you can add some chicken.

Also, a teaspoon of fish sauce makes a big difference in flavor.
