Default egg substitute

Hi Karen - everyone else as well,

Is there something I can use to bind meatloaf, meatballs or recipes such as your zuc/cheese bake (which sounds excellent) besides eggs. I think I'm allergic.

Obviously, I'm not Karen, but I have this from a friend of mine who can't eat eggs. I don't know how well it works, as I've never tried it:

Egg Replacer, Flaxseed

Recipe By :Judi, from "Becoming Vegetarian"
Serving Size : 1 Preparation Time :0:00
(Flax Seed Egg Replacer for baking, from the book "Becoming Vegetarian.")

1 tablespoon Flax Seed Meal -- preferably fresh
3 tablespoons water

In a small bowl or cup mix: 1 Tbsp. ground flax seeds, 3 Tbsp. water.

It is best to grind larger quantities of seeds at a time. You may store the ground seeds in the freezer.

Let the mixture sit for 2 to 3 minutes. The egg replacer is ready when thick.

Equivalent to 1 egg.

Per Serving (excluding unknown items): 23 Calories; 2g Fat (69.2% calories from fat); 1g Protein; 1g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; 4mg Sodium. Exchanges: .

NOTES : per serving (1 egg equiv): 23 kCals, 2.3g fat 69% (0.3s, 0.7m, 2.3p) 0mg chol, 1.3g carb/1.3g fibre, 1g protein, 4mg sodium, 30mg potassium.

I haven't tried this either, but on my box of flaxseed meal, it says to try the same thing as Kisal's recipe: "Likewise, 1 T. milled flaxseed plus 3 T. of water can replace one egg."
