Easiest 2-Serve Peanut Butter Fudge
This really can't be easier. It's the "lazy man's fudge" (or in this case, lazy woman's!).
Ingredients:
2 T. no sugar added peanut butter (either chunky or smooth, your preference)
2 T. sweet cream butter
2-3 drops liquid Splenda, or 1-1.5 packets Splenda Granular
tiny pinch salt, if desired
1. Melt butter in a coffee mug in microwave for 30 seconds.
2. Add Splenda. Stir well.
3. Add peanut butter. Stir with a fork so that it is well blended. The peanut butter will melt into the butter and will mix completely into the butter and Splenda.
4. Transfer the mixture to a small cup or mug lined with parchment paper.
5. Freeze until firm, 20-30 minutes.
It's that easy and it is delicious! Makes two generous fudge portions, or three to four small portions. Keep frozen. Using Laura Scudder's Peanut Butter and liquid Splenda, it is 6 whole or 4 net grams carbs for the entire recipe. For Splenda Granular, add 1 gram carbs per packet.
