Instead of wrapping meatloaf with bacon, we just chop it up into pieces, raw, and put it right into the meatloaf (gr. beef, onion, spices, egg) and bake. Super yummy and a piece of bacon in every bite!

Really must try the chocolate covered bacon and the bacon wrapped strawberries on that salad... great ideas Robin!!

Not a new idea but I love BLT wraps which of course is just Romaine leaves, spread with mayo and bacon and sliced tomatoes inside...very messy but very good.

I have been a big fan of making it in the oven too - Oven Bacon is so much cleaner than frying it on the stove top.
Spray a baking dish with Pam, (I found my metal baking pan needed Pam otherwise it will stick to it) place bacon strips in it, put in cold oven. Turn oven on to 400, and set the timer for 20 min. If your oven varies (get an oven thermometer) then you'll probably have to adjust the temp or time it longer - thick sliced bacon obviously will take longer to cook. Remove from oven when done.

Smoke point of lard is 370 so I've read it's better to set the oven at 325.

i am a huge fan of baking it, too- once i discovered that trick, i never did it on the stove again.

sometimes i sprinkle it with splenda and cinnamon before baking, if i want the salty/ sweet thing going. i love this on a salad with goat cheese, sometimes i add an egg on top of the salad as well.

i just thought of another bacon use i recommend: bundles of asparagus.

you guys are making me really upset the store was out of the bacon i like this week, so i just skipped it (applegate farms).

i might have to go run by whole foods, now!

I cook bacon in a big iron skillet with a top on it. I set the burner on lowest setting and put a top on it and go do something else without burning the house down.
I think I eat bacon 6 out of 7 days per week!

I started baking my bacon about a month ago and only use a skillet when I am only cooking a couple of pieces - but then why only cook a couple of pieces when you can have leftovers???

I put mine on foil lined pans - pop in oven - turn oven on and set at 400 degrees for about 20 minutes. I haven't had ANY smoke issues at all. I do set my pans on the middle rack. I could see an issue if you had your pans too close to a burner and causing some smoking but thus far I haven't had a bit.

For a recipe idea: My DH and I love to make sweet pepper poppers using mini sweet peppers (I generally buy them at Aldi as they are much cheaper than Walmart). I slice the peppers in half and fill with cream cheese mixed with some garlic, cayenne, parsley and green onion (or whatever seasoning I have closest when mixing it up). Then I either wrap them with half slices of bacon or I just lay a piece across the top of the 'boat' and bake at 400 for about 30 minutes or until the bacon is cooked. Its a milder/sweeter version of the jalapeno pepper poppers and soooo crazy good!

OK you've convinced me to try it in the oven..

I love the idea of using the miniature sweet peppers instead of Jalapeno, much better idea for my tastes.
