Next time I make chicken stock, I have this idea I want to try. You see, I keep looking for ways to use the lean, tough, stringy meat leftover from stewers after making stock. I've all but given up, but it just occurred to me that I could make mayonnaise with chicken fat! It might just be the perfect thing for chicken salad.

It depends on your version of paleo. I've made several batches with avocado oil that have been very good, but the brand of avocado oil matters a lot. Spectrum Naturals is the most neutral tasting. All the others I've tried have a strong bitter flavor that would be noticeable in mayonnaise.

My question for you is what do you want to do with the mayonnaise? You're probably not spreading it on sandwiches. If you want it to make chicken salad, for example, I'd suggest that you could make a dressing that isn't mayonnaise.

This looks great, Elizabeth. Thanks for posting the link; I'm making it today.

I'm about to test my sensitivity to eggs and several other foods with an elimination diet. This recipe reminds me that you can emulsify oil and vinegar without eggs. Tomatoes work too. It's a timely reminder.

Default Beef and Zucchini Saute

I found this recipe on Naomi's My Paleo Kitchen blog (Naomi appears to be AWOL, her last post was November). It can be found here: http://mypaleokitchen.blogspot.com/...beef-mince.html
I have tweaked some so here is my version:

Beef and Summer Squash Saute
A one pot meal...

1 pound ground beef (organic REALLY does taste, smell and look better)
4 zucchini diced (or mix and match, I usually use 2 zukes and 2 yellow crooknecks)
4 roma tomatoes, chopped (or a can of diced, I like the ones with seasonings)

Onion, chopped (I used 1 large)
Garlic, minced (I used 4-6 cloves)
Seasonings (I used dried oregano and basil, about 1 1/2 tsp each)
Salt and pepper

Brown beef in skillet with chopped onions and minced garlic until meat is browned. Season with spices. Add tomatoes (I add the liquid when using a can as well) and diced squash. Stir well and saute for a few minutes until zucchini is tender. Makes 4 good sized servings.

I love this stuff, having it almost weekly now. Very fast, easy and nutritious. If you do dairy it is nice with some fresh grated Parmesan cheese sprinkled on top.

Freaky! I ate almost exactly the same thing tonight and then I came on here and saw you posted this. Mine was ground beef, green and yellow squash, sofrito (blend of peppers, onions, garlic, tomatoes, cilantro), and tomato paste.

The sofrito is pretty flavorful (here is the recipe: http://www.daisycooks.com/pages/recipes_detail.cfm?ID=1 ), but I also added some paprika, cumin, and oregano.

I haven't been around for a while, so you can ignore me! But I was experimenting with a paleo bar the other day and hit on something really yummy so I thought I'd share it with people who might be inclined to eat it

1.5 cups of chopped nuts (I used pecans, almonds and walnuts, but next time I want to add some pumpkin seeds or sunflower seeds!)
coconut oil
1/4 cup nut butter (I used pecan butter)
shredded unsweetened coconut to taste
1/4 cup chocolate (optional, and you can use whatever percentage you're comfortable with)
1.5 tbsp honey
1 tsp cinnamon

saute the nuts in the coconut oil until toasty. Melt the chocolate. Toss them with the rest of the ingredients. Spread in coconut oil greased pan and freeze for 20 minutes, then cut into pieces and store in refrigerator. Yum! A little too dangerous, I can only make this so often, but so much better than any candy bar! You could probably eliminate the chocolate although it wouldn't set up quite as well, and you could also probably sub soaked and pureed dates or other fruit for the honey of you're into fruit only.

I did something similar. Froze them so they'd stick together nicely. You're right... tastes a little too good!

Hi,
I am new to Paelo by one month in which I lost 12 lbs, but that wasn't my goal. The goal was to eat well, stop feeling bloated and out of control. If I had a goal weight it would be only 5 more lbs, but I thought I has IBS and now all of that is gone. I don't miss dairy or wheat at all.
I do want to thank you for the great ideas I get here.
Lamb/eggplant meatballs with Tahini sauce..omg, made that 2x already.
Berry sauce, all the time
Almond pancakes..YUMMMM

I never even thought of these things, I always did Atkins in the past, but I see now how much dairy didn't agree with me. I am a hooked Paleo person now and I will contribute when I learn how to cook..LOL

Ok, I worked up the nerve to buy a bunch of tilapia from Costco. Here's how I prepared it today. It's VERY good!

Two eggs, a couple/three tablespoons of coconut milk. Beat together with a fork.

Dredge the fish through that mixture until it's well coated. Sprinkle with salt if you like.

Fry in a pan with whatever fat you like.

Then I made a sauce from butter (one could use another fat), lemon juice and capers and poured it over the fish.

The fish came out with a little crunch from the batter and frying. I liked it!

Things I want to try:

Making a macadamia nut crust
Coating in coconut flour
