Default Need Vegetable Suggestions

Guys, I need some help. I am stuck in a vege rut. About the only veges I eat are salad lettuces, broccili and cauliflower. I do put a little onion and bell pepper in some of my meats but that's about it. Can you suggest some other types of veges as well as ways to prepare them?

Try broiled zucchini with parmesean or other cheese on top
very good - 1/2 cup (2.7 oz. cooked) zucchini =1.9 gms

"Bel-Air" brand, froz. spinach 3.3 oz.= 3.gms
Also try baking this with swiss on top.

Mushrooms ! (are they concidered vegis ?) try adding them to the spinach concotion.

I just bought some gorgeous Portobello mushrooms...they are HUGE...and plan to saute' them in some butter tonight.

A couple great ones are Spinach added to your salad or cooked with butter, garlic and a bit of lemon juice. Really low on carbs, and great source of fiber.

The other is Daikon radish. (not the little red radish's we are accustomed to. These are big white in the same rough shape of a carrot, but 5 times larger.) All kinds of stuff can be done with Daikon such as stir fry, hash browns, some have made it into a mock-potato salad. Find recipes for it in the forums here.

Have you tried stir fry? Bok choi, pak choi, tatsoi, and other Oriental veg is great (throw in some of that broccoli for a different taste). Baby chard is great in stirfries as well as salads, as is kale and other leafy greens. Have you tried different combinations for salads for variety? Something like purslane, lambs lettuce, watercress, fresh parsley and coriander/cilantro, the red lettuce types... or a new combination with toppings: avocado, alfalfa sprouts, and a spinkling of sunflower seeds for example, or if you are able to have some fruit carbs, sectioned grapefriut (without the white membrane) is good.

Deb mentioned portobello mushrooms. They are delicious. Try slicing them up, and cooking with diced green onions and butter. It's so good, it'll make you slap your mama.

Wink love those portobellos...

......and portobellos are soooooooo good with a little cheese in an omelet, too!
