Default Quick & easy fennel bulb with Italian seasonings

This was an impromtu side dish that I made to use up a fennel bulb. The results were great, so I thought I'd share it. Didn't measure, sorry.

Heat a skillet over high heat. Add to the pan:

a slosh of olive oil
1 fennel bulb, diced into 1/3 inch (1 cm) cubes
2 garlic cloves, minced

Cook for just a minute or two till the fennel is beginning to turn translucent but is still crisp. Sprinkle over the fennel:

Italian seasoning with fennel seed (I used Penzey's Pizza Seasoning)
salt if it's not already in the seasoning mix
a dash or two of red wine vinegar
a dash or two of sherry vinegar

Toss for about 30 seconds more. Taste and correct seasonings. Serve.

I love fennel.

You can also just steam it or bake it and it's lovely aniseed tastes pairs well with salmon
