Default No-Grain Cous Cous

This is great as a base for Indian curries and foods which would generally be served with cous cous.

Serves 2-3:

In a microwave safe bowl, mix:

100 grams ground almond
2 large eggs

Microwave on full power for 2 minutes.

Remove from bowl, and mash up with a fork into crumbs.

Add chicken broth (or broth of choice) to moisten and soften, and season as you like (I use garlic powder, salt, and sage).

It doesn't absorb liquids quite as well as grain, but it's pretty close!

Hmmm ..... I wonder if a little flax meal mixed with the ground almonds might make it a little more absorbent? Sounds like something well worth playing with ... a good base for curries is always welcome and, one does get a little tired of mashed cauliflower all the time. Thanks for posting this idea!!

How creative of you! I wonder if you could use this for the bulger used in Middle Eastern tabouleh parsley salad?
