Default Great Eggplant Dish

My family was having spaghetti and I wanted an italian style dish and was tired of spaghetti squash so I decided to buy some eggplant instead. Now the only way I have eaten eggplant in the past in eggplant parm (breaded, a big no no for low carb) so I had to decide what to do with it and here's what I came up.

3 baby eggplants-sliced and soaking in salt water for about 10 minutes-then pat dry and dice
2 teasppons of garlic minced
1 green bell pepper diced
handful of green and black olives sliced
red pepper flakes
olive oil
lowest carb spaghetti sauce you can find
provolone cheese slices (mozerella would work too)


First I put some olive oil in a pan and added the garlic and red pepper flakes, I gave it a quick saute being careful not to burn the garlic. Then I added the green pepper and eggplant and sauted until tender. Next I added the olives and just enough spaghetti sauce to bring it together (it was more chunky then sauce-like). Next I cut the heat and covered it with provolone cheese slices and just let it melt.

I really enjoyed this and would definetly make it again. Sorry I don't have a carb count figured out.
