Grandma Marian's Crunchy Almond Omelette
My grandmother will be 96 this week. Her mind is sharper than those of most young people I know and she is only now just beginning to suffer some physical decline. She has always eaten fresh whole foods, never anything processed. She has always believed in using lots of butter and has always been suspicious of oil -- she was told by a doctor in the fifties that oils are indigestible and that animal fats are the only fats we are meant to eat, and she has stuck with that advice. She has always believed in the importance of protein (which she pronounces with three syllables: PRO-tee-in) and vegetables. And when she has eaten bread, it has always been hearty, whole-grained bread. She's also a chocolate fanatic.
One of her old standby breakfasts is an almond omelette, because she loves the crunch that the almonds add. She preheats the pan over medium-low heat, melts butter, and then sautees either sliced or slivered almonds until they are golden. and then carefully pours the beaten egg mixture over. She flips it when it is mostly set, but doesn't fold it for serving. It is delicious! (I finish it under a preheated broiler rather than flipping it.)
The one complaint I have about the low carb diet is the lack of crunch; this is one place you can add crunch.
