Default Daikon side dish ?

I picked up a nice sized Daikon at the market today and was wondering if some lovely lady here might help me with a recipe for it ..I remember stumbling upon it last year but now can't seem to find it.
I remember somthing about daikon hashbrowns in the name ?

Thank you ahead of time

Angel

I think this is probably close if not right on. it's how I use to make it I believe.

I shred it and then fry it in garlic & olive oil. Top it with seasoned salt before eating.

Try shredding it in salads too.

Have a great weekend

Here is a link to the Daik-tato recipe: http://www.lowcarb.ca/karen/recipe053.html

And this is another one I found, which I think is also Karen's:

Roasted Daikon
1 large daikon radish, cut into 1” pieces
1-2 tablespoons extra virgin olive oil
Dried rosemary or thyme (optional)

Set over to 400*. Preheat for 10 minutes or so.

Toss daikon chunks with olive oil and salt. Roast on a baking sheet for 15 minutes. Turn daikon chunks over to roast the other side. Toss with dried rosemary and/or thyme if desired. Roast for another 15 minutes.

Serves 2-4 depending on size of daikon.

You ladies are the best...So many to try.

I wound up mixing hickory smoked tuna, beaten egg, shredded cheese and shredded Daikon. It was fun to play around with and DH and I enjoyed them fried in olive oil.. MMMM good.
