Smile Cured Bacon

Hi Fellow Low Carbers,

Another question from a newbie.

I'm in South Africa and have never seen nitrate free bacon here.
I read somewhere that the sugar content in the nitrates cooks out during the cooking process anyway so it doesn't matter whether the bacon was cured with nitrates. Is this true?

Nitrates and sugar are completely two different things.
Nitrate: don't worry too much about it. You'll find a fair bit of research in the research subforum that shows that nitrates aren't harmful at all. In fact some vegies contain more nitrates than your bacon.
Sugar: after searching Brisbane for sugar free bacon and never finding any, I decided not to worry about it. And the tiny amount in bacon is one thing that has never made any difference to my losses.

So my advice is to go ahead and eat your bacon and enjoy it.

I was thinking the same thing...I eat bacon (and lots of it sometimes) and have never had a problem.

Same here, I go through sprees where all I want to eat is bacon and I keep loosing the weight.

Aahh, that's awesome news guys! I can now get to eating my breakfast guilt-free!

I read the book and couldn't work out whether i was supposed to exclude bacon, limit it or eat it.
