Do you have any idea how hard it is to find a copper bowl for beating eggs? After a year of wishing I could make this (I have never succeeded with egg whites) I spent $40 -- and that for the small one -- at amazon.com on a copper bowl. Now I have to go through the 'stripping' process. What a pain in the butt, no wonder they are fairly uncommon in my world!

My plan is to secretly test a few variants of this recipe while my little girl (who also eats LC with me) is at school over the next two weeks. Then for Valentine's Day, we're going to get up early, have sweet cocoa-coffee in these pretty red&pink hearts mugs we got, and some kind of 'danish' with this recipe as the base.

I'd really like to try the variant without yolks, simply because we both adore angel food cake. I have a 1 Tbsp-size ice cream scoop and tiny little angel food cake balls sound awesome. ;-)

I use a regular ceramic bowl...and whip the whites on high with my hand mixer....after a little bit they're perfect. Why would you need a copper bowl? I just made this recipe again tonight...i love it! Thanks for keeping the thread active!

Funny...i haven't owned a toaster in over three years. I've got no need for one!

A friend of mine after I gave this recipe to her, tried them in a muffin tin and said the result was similar to pop-overs...yum!

NightNurse, what were you using?

I use a rotary beater, the kind with a crank on the side that you turn. I can beat 3 egg whites stiff in 50 seconds. (I've timed it.) With my electric hand mixer, it take 4 minutes.

A note on cream of tartar -- I forgot it once, and it didn't make any difference. I don't use it anymore.
