Default I need the flax muffin in a cup recipe

I lost my recipe and cannt find it in the recipe section here. My husband is diabetic and has a injury he is healing from so he has to keep his blood sugar low . Nothing is better than low carb for lowering blood sugar Anyway I don,t post here much anymore but I lurk alot He is asking for this muffin and I can,t find it anywhere. Its made in a coffee cup has flaxseed, butter, Splenda ,one egg and baking powder and is cooked in the microwave. Does anyone here remember the amounts? If so I would be forever grateful

HERE is the basic mug muffin recipe that I use. I usually add pumpkin to make it more moist. I love them. I've made chocolate, blueberry, cinnamon apple, pumpkin spice, coconut, peanut butter, and more. I often add chia seeds and/or hemp hearts for more fiber. I start with the base recipe and experiment from there.

Leave out the sweetener and cinnamon and make savory muffins as well. I put cheese (chopped up cheddar, parmesan, feta cubes), green onions, pesto, bacon bits, flavoured mayos like chipotle, and spices like curry, italian, garlic powder etc. all in different combos.

Thank you both so much .I spent a lot of time looking for it today. I am going to make one right know . I never considered adding pumkin . I will have to get some. Thank you again this forum is the best.

Sorry your husband isn't feEling well- I'm a type 1, and I am so glad he has such a supportive partner to help him!

I like the muffin in a mug recipe, but I LOVE this recipe that makes a pan of it (almost identical ingredients/ proportions). This way you have "bread" and it's more moist then microwaved muffins.
I cut this recipe in half and use 9x 9 pan. I cut it in 4 equal squares. Then carefully use one square per serving and slice square into 2 thin slices. They are about sandwich size. Each gives you 1/4 cup flax, so I keep it to that serving so my stomach dies t get upset.

Also, because I halve recipe, I bake for 20 minutes at 350. Use a knife to see if it needs a few more minutes.

Thanks Robin! this is the first "bread" recipe I tried six years ago and love it, but never thought about putting it in a 9 x 9 pan to get the size more uniform.

Thankyou for posting that recipe . I,m exited about it , I already see lots of ways he can expand his diet with this bread. French toast with sugar free syrup ,garlic bread ect. I heart goes out to all you diabetics. Its a hard way to live . The official diabetic diet sends my husbands sugar sky high Thankfully we stumbled on low carb as a way to eat.

I have a LC tortilla that I buy that doesnot cause any cravings or issues with my weightloss. Too many times its not available in the store. Now I can make my own bread. I do make mug in a muffine sometimes, but this will work too.
