Default Paleo Shepherd's Pie

I always loved Shepherd's Pie when I was a kid so I am working on a good substitute right now. This is how I am making it so far:

Ingredients:
1 Butternut Squash
1 lb ground meet of your choice (I've used ground chicken and ground buffalo)
1/2 small onion, diced
2 Serrano peppers, diced with seeds
3 garlic gloves, minced
1 8 oz can of tomato paste
Pepper to taste
1 tsp Basil
1 tsp Oregano

Directions:
I follow the directions from here to make mashed butternut (although I leave out the butter).

Once that is done, I mix the ground meat, tomato paste, onion, garlic, basil, Oregano, Serrano peppers, and pepper into a 1.5 QT Corningware dish, top it with the mashed butternut and then cook for about an hour in the oven on 350 degrees

Paleo Tandoori - No dairy products!

Chicken (I use chicken thighs with skin, or a whole cut-up chicken)

Marinade
1/3 Cup. of Olive oil
1/3 Cup of Lemon Juice
2.5 Tbl Tandoori seasoning (I use Penzey's)
1 tsp of salt.

Mix everything in the marinade and pour it over the chicken and let it marinade for 6-24 hours.

Bake at 375' for 30 minutes. Then turn it up to 500' and bake until the skin is very crisp.

YUM!

Default Lamb Curry with Coconut Cream

Allright, this is from:http://www.paleodietbest.com/

This is best made at least a day ahead; keep, covered,
in refrigerator, or you may freeze it.

1 1/2 kg boned leg of lamb
2 onions, sliced
1 cup coconut milk
1/2 tsp ground cardamom
1/2 tsp ground cumin
2 onion, chopped, extra
2 cloves garlic, crushed
2 small fresh green chilis, chopped
1 Tbs chopped fresh coriander
2 tsp grated fresh ginger
4 Tbs coconut or olive oil
1/3 cup water
150g can coconut cream (5 1/4 oz.)

Cut lamb into 2cm cubes. Combine lamb, onions, coconut milk, cardamom and
cumin in a large bowl, mix well, let stand for at least 1 hour.
Meanwhile, blend or process extra onions, garlic, chillies, coriander and
ginger until combined. Heat oil in a large saucepan, add chilli mixture,
stir over medium heat for 3 minutes.
Add a small amount of lamb mixture to pan (do not have more than a single
layer of lamb in the pan at one time), stir over high heat until lamb is
well browned all over; remove from pan.
Repeat with remaining lamb.
Return all of the lamb to pan, add water, bring to the boil, then reduce
heat and simmer, covered, for about 45 minutes, or until the lamb is
tender. Stir in coconut cream, heat through without bringing to the boil.

This recipe reminds me of alfredo sauce, and I use it heated on spiralized zuchini noodles, chilled on salad greens, or just plain as a chilled raw soup.

I think you could use macadamias instead of the cashews.

There's something about the nutmeg and/or thyme (or the combination) that makes it very special. It takes a fairly hefty blender to make it. I got it from Carmella at the Raw Freedom Community forum.

4 cups spinach
1 small garlic clove

1/4 cup water

1 tbs olive oil

Do you like kelp noodles as well, or better? I bought kelp noodles and will try them very soon.

I love kelp noodles! I've got some now serving as spaghetti. But really... I like the size of the zucchini noodles better with my new spiral slicer.

I've been experimenting with mayonnaise to try and get a better Omega fat balance. Here's the recipe I came up with. I think it tastes great! My husband liked it too, and that's not an easy thing to accomplish with homemade mayo.

Mayonnaise

4 oz hemp oil
2 oz walnut oil
2 oz melted virgin coconut oil
2 egg yolks
1 tsp Dijon
1 Tbls lemon juice
1 Tbls Apple Cider Vinegar
3/4 tsp salt

Put all ingredients in the beaker that comes with an Immersion Blender. Hold blender at bottom of beaker and pulse with 1-2 second pulses to start. You will see a “cloud” of white creamyness coming up from the bottom. Then use longer pulses until all is mixed, emulsified, and creamy.

Or you can make this the regular way by drizzling the oil into a food processor or blender.

Beware: This has a light green color due to the hemp oil.

Saw this programme on the good food channel- Primal grill, the recipes I saw were paleo friendly, I'm not sure all of them are but the methods of cooking may be useful to those (like me) who wouldn't know what to soak oak chips in and what herbs and spices to use, plus he cooks everything on the bone- YUM!

Paleo Pancakes

All right, this has become a favorite on my "up" days. I'm doing an Up Day/Down Day diet. One day very low calorie, the next day more normal.

2 Tbl ground roasted flax seed
2 Tbl ground chia
2 Tbl hemp hearts
1 tsp of baking powder (you can omit and/or use baking soda instead, it'll just be dense).

Mix dry ingredients with a fork.

Add 1-2 eggs and beat them into the dry ingredients with your fork. Add liquid (water, coconut milk, whatever) until it is fairly loose, like pancake batter.

Pour into a hot pan with some oil or grease and spread it out by tilting the pan. If you used a leavener it'll rise. Flip it once the top starts to look dry-ish.

You could use almost anything in place of the flax, hemp hearts and ground chia. ALmond meal, coconut flour, whatever strikes your fancy.

Toppings:

Heated, stevia (optional) sweetened frozen berries and butter.
Warm, melted butter or ghee and Moinin syrup.

Notes: Roasted flax seed tastes awesome. It kind of reminds me of roasted peanuts.

Default Ground Beef and Whatever

This is a favorite for me to have on hand. Brown a pound ground beef (I like to use grass-fed, organic) with some chopped garlic and/or chopped onion. Let cool and store in container in the frig. The sky is the limit here. When I need something quick, I put some of the cooked ground beef in a skillet with a coconut oil and then add whatever vegetables I have on hand - chopped spinach, broccoli, squash, mushrooms, kale, cauliflower, etc. The flavor can be changed by simply adding different seasonings. It's my favorite quick lunch or dinner! I actually saw a recipe for a ground beef/spinach frittata, but haven't tried mixing it with eggs yet.
