This may sound stupid but what is a MIM?
I'm very leery about eating baked goods as the flour used is a huge issue for me. Any flour is an issue to me. Once in a while, if its stuck in my head and I can't stop thinking abut it, I'll allow myself to have one thing( not mentioning any names here ) and thats it.

What you're planning to do sounds right ot me.
I never did count my carbs as I followed the SBD to do this and it doesn't require counting of carbs per se but portions of starch and fruit. All other categories are allowed for in phase I with given portion controls.
I estimate that I use about 60-100 grams of carbs a day. Lower if I seek loss.
Your plan does sound right to me to add in 5 grams at a time. GO SLOW!! Follow the OWL ladder and you should be fine!
