Here is a recipe that I got from the back of a packet of Knorr Bearnaise Mix

And here is how I modified it to make it lower in Carbs! Not for every day meal but for special occassions (high carb count mainly comes from tomatoes ~5 net carbs per serving)
Makes 2 servings
Ingredients
1/4 cup of heavy whipping cream
3/4 cup of cold water
1 packet of Knorr Bearnaise Sauce
1/4 cup of butter
2 fillets of fish (your choice)
1 1/2 cup of diced tomatoes (I removed the seeds)
1/2 cup of diced white onions
2 Tbs of vermouth cooking wine
Oil
Directions:
1. Follow directions on back of bearnaise mix (substitute heavy cream and water for milk) set aside.
2. Rub fish with oils and place in a small baking dish and bake in a 350 oven until fish flakes
3. Saute onions for about 5 mins in oil
4. Add tomoatoes and turn down heat and allow them to simmer fpr about 10 min then add vermouth.
5. Mix 1/4 cup of prepared bearnaise sauce to tomato mixture and keep warm (save remaining bearnaise sauce for eggs or meat or whatever)
6. Top fish with tomato bearnaise and enjoy!
