Thanksgiving dinner was a huge success with the wife of my diabetic friend asking me for copies of all the recipes. Neither she nor her husband could believe that a diabetic could enjoy food like that without having to dose for double/triple carbs. The low carb dressing was the biggest hit. Faux sweet potatoes, not so much. I doubt I will bother fixing that recipe again. I think next time I'll try a combination of butternut squash and pumpkin. Both are lower carb than sweet potatoes. Or, maybe just go with garlic mashed cauliflower. But I do like the visual impact of bright orange sweet potatoes. Ah well. Lime cheesecake pie was good but would have been better with twice as much lime juice to notch up the flavor some. And, maybe a bit more gelatin and 25% less cream cheese so it was a bit lighter. The pecan crust was PERFECT tho. And, even my Dad who normally will not touch Brussels sprouts got a 2nd helping of them. Hard to resist when fried with bacon, onion and garlic.
And, best of all, despite indulging in two glasses of sherry (my wine of choice which is why I normally don't drink any alcohol) I'm down a pound TODAY!!! Probably because we finished eating about 2PM and I was so stuffed I didn't want another bite before before bedtime so my body had an extra 5 hours or so to digest it all before I weighed in this morning. Whatever, I'll take it.
