Default New Here but not to LC!

Hi all,

Just joined after following a link here when looking for tips to make Oopsie Rolls

I've done LC off/on (mostly off, to be honest, argh) since around 2004. Yeah, that's a long time. I started with South Beach back then, had ok results, fell off plan, gained it back. That happened a few times doing both SB and Atkins. But I'm determined to see it through past 40 lbs and hit the magic 60 this time!!!

I'm 52, divorced mom of 5, grandma of 4, and in great health other than these extra pounds. No medications, no issues whatsoever. I work a variety of jobs (don't really have a career, per se) but my first love is writing. I'm at work on my 3rd novel now, never tried being published before now but that's my goal. Anyway, nice to be here!

Lovely to see you here! I also started with south beach, its a good first step into the world. Writing is also my passion, but i mostly do it for work now. Wishing you all the best, and thanking the ether for oopsies which brought you here

Thank you mama sebo!

Well I made oopsie rolls using mayo and baked them in a muffin tin. They actually turned out kind of nice! Well, I haven't eaten one yet so I'm not sure, but hopefully they taste good. Going to try one with grilled chicken breast for dinner tonight.

I should qualify that by saying I'm 52 and 4 of the 5 are out on their own, 2 of whom have their own families now, so I'm ALMOST an empty-nester. My youngest will be 18 next month! I will say 10 years ago it was a bit more challenging to find time for writing, but I managed

The rolls turned out okay, but I realized I had no cream of tartar after I started them. I just went ahead anyway. They of course collapsed after baking but they tasted just fine!

Thanks, and yay for us restarters! I got through day one without a problem. Carb cravings hit pretty hard last night, they always do in the evening. I made a sort of pudding/mousse type thing with HWC, Stevia, and some unsweetened cocoa powder, added a dab of ricotta to give it some body. It wasn't bad....

It really is a shocker when we all think how long we have been at this weight loss stuff You have stumbled into a great LC forum with both good information and support. Suggest you look all around beyond recipes and find whatever help you need to restart LC with commitment. There are Buddy groups and challenges, or since you like to write start a journal, or do more reading about newer versions of LC, definitely there is more emphasis now on using real food. https://www.dietdoctor.com/low-carb Gary Taubes book Why We Get Fat have helped many understand their weight loss struggles and how to overcome them.

It's true, it's shocking how long it's been. Gosh, in that time I could've lost quadruple what I need to and been maintaining all this time if I'd just had some discipline.

I was always skinny as a kid and young adult. Even after babies 1-4 I dropped right back down to a size 4 or 5 within a few months. It was #5 that did me in I never lost the weight after he was born, and now weigh a good 15 lbs more than I did the day I had him. Hmph...

The older I get the tougher it is, too. I just hit the magical menopause (yikes...the hot flashes!! oh boy, they're rough!) in February of this year, so I know I really have my work cut out for me this time.

I'll definitely be looking around the forum and getting in on challenges and such. Thanks!!!
