Default Muffin substitutes... mmmm.........

In Australia we have these little cakes called Friands (pronounced free-onds). The standard way of making them is with mostly almond meal as the base... I tried these using a few tablespoons of cocoa instead of the lime and they were lovely

LITTLE LIME FRIANDS
ingredients
6 egg whites
185g butter, melted
1 cup almond meal
1½ - 2 cups splenda
½ cup atkins bake mix
1 tablespoon finely grated lime rind
1 tablespoon lime juice
30 (60g) whole blanched almonds

Preheat oven to moderately hot (200°C). Grease 30 mini-muffin pan holes.

Place egg whites in a medium bowl; whisk lightly until combined. Add butter, almond meal, sifted icing sugar and flour then rind and juice. Whisk until just combined. Divide mixture among prepared pans; top with almonds.

Bake in a moderately hot oven for about 15 minutes. Turn onto wire racks to cool, right way up.

Serve warm or at room temperature, dusted with a little extra sifted icing sugar.

Suitable to freeze.
Butter suitable to microwave.

I've never heard of these Katt. Do they come out like a cake or a biscuit??
