Default Interesting milestone for me

I am no where near my goal weight of 125 lbs. Sad to say I actually put the weight back on over the past year. I guess I should update my stats but I don't want to ...yet. I did gain quite a bit of weight back but, my smaller clothes still fit Yeah, I gained it back but I ran a 5K competition a month ago. My waist is within a healthy diameter

I gained it back even though I ate carefully and low carbally. I stepped into perimenopause and that has caused the gain. I am not concerned that I gained the weight ( there is much more to this than weightloss ). But I am working at losing it with exercise and coconut oil. Honestly, the coconut oil has done more for me than the exercise. I consider this a success story.

I have come to another conclusion. Although I did gain some weight back. I probably would weigh about 190 lbs by now if I hadn't lost the weight in the first place. I am hanging on to my lifsetyle and tweaking it until the weight gradually lands on target. I continue to eat low carb and I add coconut oil to my diet. I have not had a cold or flu or any other illness. I have met 3 people who want to begin doing Atkins. I just want them to do it correctly..

May I ask how you use the coconut oil? I have some, but other than using it when I fry something, I'm rather at a loss as to what to do with the stuff. I know some members put it in their coffee, but the thought of an "oil slick" floating on top of my coffee seems a bit repugnant to me. If you use it in your coffee or tea, would you mind describing what it's like? I'd sure like to learn more ways to use coconut oil.

There are many brands of coconut oil, many of which do not have a coconut flavor. Read the labels, and try a few. The best are found at health food stores, and are "virgin" and cold-pressed. One jar I bought at Wal-Mart was a lot cheaper. Some coconut oil purist will probably say it's evil, but it works.

Here's my favorite decadent coconut oil recipe. WARNING: Don't eat the whole batch at once or you'll get a major tummy ache. You have to "work up to" a big slug of coconut oil. Also...this stuff can be addictive. Too much of a good thing is always too much.

CHOCOLATE BARK

1/4 cup coconut oil, melted
1 to 1.5 TBS cocoa powder (more or less)
1/4 tsp. stevia or other sweetener (I use 1-2 packets Splenda)
Chopped nuts if you want

Put a metal baking pan in the freezer for at least 10 minutes to get it good and cold. Line it with wax paper. Melt the coconut oil and stir in the chocolate and sweetener. Add the nuts. Pour slowly onto the cold pan. Put the pan back in the freezer for a while. Break it into bark. Store in the freezer.

I also use coconut oil for muffins, and in hot cereal I make with flaxseed and wheat bran. See the Recipes here for baking ideas.
