mainecyn..... I too will be grilling chicken tonight

I am taking a whole bird... I clip the sides a little so it flattens
and stuff the whole thing (cavity and under the skin) with herbs from my garden
sage, rosemary, oregano and garlic

then I put it on my griddle on the bbq and roast that yummy baby on high for about an hour and a half

comes out so flavorful and juicy.....
and the skin is crispy.
I cook one this way every week!

Along with the chicken I'll have grilled patty pan squash (love those little buggers too)

wow, that chicken sounds amazing! I never have any luck with chicken on the bbq~it always catches on fire. there must be something i'm doing wrong

tonight is liver night it always gives me lots of energy

we had crabbie patties for lunch~they're the best

Oh, boy! I'm getting hungry now!

Last night, I had local scallops cooked in butter and shoyuu and spinach cooked with cream cheese and shredded cheese (accidentally used too much cheese). But I have no idea what I'm eating tonight!

Last night we had broiled Swai fish on a bed of spinach I spiced up with an asian chili spice. Had this with "fried rice" made from riced cauliflower. SO GOOD!

I'd also forgotten about my "fried rice" cauliflower until recently. All I do for this is to "rice" my cauliflower in a food processer. I then throw it in the microwave for about two minutes to soften it up a bit, then throw it in a pan and make it just like I would fried rice, with a bit of egg and ginger and soy and TADA!

I'm cooking today! Were having Bar-B-Q Snapping turtle for lunch and grilling chicken leg quarters for supper, both meals will have a salad on the side with ranch dressing, YUM!

BUrgers is top choice, taco salads, burger bowls. . . could look up lc recipies with ground burger and see what you get.

I just looked it up, there are tons of options that we forget about all the time. Meatballs, meatloaf, yum!
