Default picky 11 year old LCing it

Hi , I am looking for some advice from younger picky eater's that are low carbing .

I am looking for ideas for my son that does not enjoy many veggies , we can get cucumbers , lettuce , carrots and starchy veggies that can definitly not pass as low carb .

I will take any snack , lunch , side dishes that you have discovered and enjoyed so I can get him to stay eating this way successfully

I'd ask this in the general forum- you will find more parents facing similar battles, than a subforum directed at teens/ college kids

If your son like starchy veggies, have you tried things like the mock mashed potatoes made with cauliflower?

for lunches, i would pack a mix of the following:

1. turkey roll ups- can roll them around mayo, cheese, pickle spears, cucubmer spears, etc.....

2. sf jello

3. string cheese or jerky

4. nuts

5. any veg he will eat with a little thing of dip

6. you can make cookies out of peanut butter, an egg, and splenda (google south beach peanut butter cookie recipe)

You could try working through some of Linda's low carb recipes. She has a great selection of family friendly meals, sides and desserts.

The other thing to remember is that you often need to present food multiple times to children before they like it, 10-20 times even. At each meal offer some stuff you know they like, some mew stuff and let them try a little. But don't make a battle out of it, just let it go if they choose not to eat it.
Sometimes the children are more keen to try food if they cook it...maybe you could try that in the weekend?

I figure if my kids are eating whole foods, I don't really need to worry about carb content.. they eat fruits, dairy, potatoes, vegetables. They still eat about 1/2 (probably less) than the SAD.

I'm believe if I had eaten whole foods my whole life, I wouldn't need to worry as much about carb content in foods.

I think kids who get involved in cooking, shopping, and even growing their food, get attached to the idea of actually eating it as well. Maybe if you can get your son involved more he'll be more open to new foods.
