Whiting Fillet Rolls
Ingredients for 4 persons: 4 whiting fillets, 2 tablespoons ground pork rinds, 1 extra large egg (.7 ECC), a few parsley leaves, 1 lemon (3.9 ECC), salt, pepper.
Preparation: 10 minutes. Cooking: 5 minutes.
Preparation: Beat the egg in omelet. Press each whiting fillet in the beaten egg, then in the ground pork rinds. Roll them and fix them with toothpicks. Warm oil and deep fry the fillets. When they are golden, drain them on a paper towel. Decorate the fillets with lemon slices and parsley and serve with zucchini "spaghetti" cooked in olive oil.
