Default Blueberry Betsy

My friend Betsy was telling me about her mock chocolate danish she makes in little ramekins and I was thinking of making one because she makes them sound so yummy. But I didn't have any cocoa =/

Here is the result of my experiment that night, I have been eating this fairly often now, I call it a blueberry Betsy in honor of the person who inspired it.

Blueberry Betsy


2oz Cream cheese
1 Egg
1 Scoop Vanilla protein powder (I use Immuno Whey)
3 Tbl Almond meal
1/2oz Blueberries
1 tsp Splenda (Optional)

Soften cream cheese whisk until smooth, add egg and whisk until smooth again. Add protein powder and almond meal, mix until blended and smooth.

Put in container and place blueberries on top, nuke for 1 minute or less depending on your MW.

Sprinkle with splenda before serving if desired. Makes one serving.

*My protein powder is Immuno Whey by Caruso Fitness Nutrition, it has 0 carbs and tastes really good. My scoop measure 39cc.
If yours is less sweet then you might need to add a little splenda to sweeten it.
