Thumbs up Salmon anyone?

Salmon with Vegetable Crest

Serves two.
Preheat oven to 400


2 Salmon steaks or fillets (about 6oz each)
---------------------------------
2 oz cream cheese
1/4 cup each of finely grated carrots and chopped seeded tomatoes
2 tablespoons of thinly sliced green onions
1 tablespoon finely chopped parsley
1 tablespoon lemon juice
salt and pepper to taste.

Spray shallow baking pan with cooking spray. Place fish in a single layer in the pan and drizzle with 2 tablespoons of lemon juice. Set aside.

In a small bowl, mix cheese, salt, pepper and remaining 1 tablespoon of lemon juice until smooth and fluffy. Lightly stir in carrots, tomato, onions and parsley. Mound vegetable mixture evenly over fish, spreading nearly to edges.

Bake, uncovered in a 400 oven until fish flakes easly when prodded in the thickest portion. 12 to 15 mins.

Per serving:
36 grams protein
7 grams carbohydrates
18 grams fat
330 milligrams sodium

Ahem, I was coming to give my two in anticipation of trying this out! And now I find I must defend my stance on fish. I'm all for conservation, what can I day (it really is in my job description!)

Oh for those of you that don't like Salmon...you can substitute Halibut or a simlar firm flesh fish.

This sounds great, and I'll certainly be trying it -- but one question:

aren't carrots a big bozo-no-no for lcrs?!
I think I'd be tempted to leave them out . . .

At 7 grams per serving there isn't enough carrots in there to actually worry about It does add flavor, but with the other ingredients it's offset.

Carrots carry a rating of 70 on the GI table, that is lower than brown rice (79) and table sugar (92) and sweet potatoes (77). So they aren't quite as bad as people think they are.

I have never seen it documented where carrots are a no no on low carb. Just to limit them.

Yep, and keep in mind that not everyone is eating the same amount of carbs - some of us go higher on the 'low carb' than others.

Curious, AC, what G.I. list do you have? Sweet potatoes on mine are either 54 or 57.

I had one booked off Mendosa that is now downloadable only. But I also have this one (duplicated several times on other pages) that breaks things down into "low" "high" "mod" etc:

Prepared a little different version of this for dinner this evening. I took 2 large filets of salmon and drizzled with lemon juice and set aside. 1 8oz cream cheese with a small drizzle of lemon juice, jerk seasoning (~1 tsp), pepper and a dash of salt. Creamed these items and covered the top of the salmon. Baked in oven at 400 degrees for approximately 15-20 minutes until flaky in the thickest area. MMMMMMMmmmmmmmmmm I calculated that this was approximately 4 grams carbs a piece. This fed 4 people wonderful portions.
