Default yucca

cant find it any where. Is it acceptable for phase 2? and what is the serving?
i am adding starchy veggies and came across this one at the store. seems that would be relative of sweet potatoe? or am i worng and should stay away from it.

I had to go and look it up myself!

Yucca is the same as cassava, which is considered a starchy veggie on the SBD.
1/2 cup is a serving and here is the breakdown:

the latinos boil the yucca until soft, drain, and then drizzle olive oil and throw smashed garlic on top....
it's mouthwatering!

10 lbs? Does it keep or do you plan to use it up quickly?

I can't think of any vegetable that we can't have some of, can you?
While I haven't tried this one, maybe I will now that you've brought it up.
I do tend to avoid the very high sugar and high GI veggies like beets and white potatoes.
I love the food lists for SB. They've taught me a lot.

I haven’t touch white potatoes or corn yet. I will put yucca in the root seller and see what happens. If it tastes like fries kids might like it. We shall see. Any way I have 5 people at the dinner table and I am sure we will eat it up. I will report tomorrow about the yucca experiment. I’ve never tried it before either. But we are trying to add some veggies we never tried before. Who would think but kids like mashed turnip. I’ve never tried it before SBD. I am very careful with the fruit though as it turns me into craving maniac. 1 serving of fruit 2-3 times a week and 1 serving of starchy veggie a day on the plan for me as of right now. Subject to change though .
I don’t have the scale, so have no idea about my weight. But will find out in October at the doctor appointment. But I went from size 24 to size 10-12 thanks to SBD and Judy. Woohoo!
Judy, you are huge insperation to us.

PS: i do use beets once in a while on my salad. Just shred some raw beets on my salad and top it with some chicken. Yuum

hmmm, mashed turnips are yummy and I never had them either until I started eating this way.
Have you tried winter squashes yet? butternut is delish and your kids may like that too.
Do you do mashed cauliflower? I make mine like its garlic mashed potatoes. its whats for dinner tonight with a steak.

Corn on the cobb? fresh from the local farmers? excellent!!

Yeah butternut squash and acorn squash is the staple in my house. Kids love acorn squash baked with a bit of butter and cinnamon. As a matter of fact I have a garden and harvesting winter squashes this days a lot. They keep fresh for several month in the root cellar.
I am trying to cook one new thing a week and give it to the kids while they are blind folded so they can give it there own name. We tried mashed buttercup squash last week for the first time, I thought it was very good with slightly orange flavor. My 6 year old said that it was orange sweet potatoes and my 2 year old asked for seconds.
For diner tonight Maple walnut chicken, yucca and Brussels sprouts with garlic.

How cool that you've got not only a root cellar but a garden to grow things!!

all i can say that yucca fries tastes and looks just like regular potatoes. i bet would be great in beef stew to replace the potatoes.

Great idea!!

Was it difficult to cut them into the shape of a fry? or is it soft to cut?

they are very difficult to cut or peal. I boiled them first, till they were nice and soft. when they were cold enough to handle i cut it just as i would with regular potatoes. Sprincle with olive oil, salt and a bit pepper and cooked under the broiler to make them nice and crispy. It is really good, but dangerous not to go over one serving. we had 2 yuccas for 5 people and there was no leftovers. kids were veryy happy as they dont get fries too often

I still didn't add starchy veggies to my diet. I eat 1/2 cup of allowed legumes and 1/2 cups of high fiber grains everyday in different forms and feel like they are enough for starch. Is it wrong not eating those starchy veggies? I have just never been a fan of carrot, sweet potatoes, corn, beets etc. I was not eating them much before SBD either.

Thanks for sharing. I'll have to see about trying this. Not seen it at our regular store, but we have a farmers market close. So might have to make a trip there on Sat.

I like the idea for adding it to soup. We've had some really cold temps this week so its time for soups/stews.
I love 1 pot meals!!!!
