Lightbulb Faux apple cobbler with chayote squash

Chayote squash is also called vegetable pear. It has a texture like raw apple...firm and crisp. Not a pronounced flavor of its own, but absorbs flavor from sauces and seasonings. You can sub it in apple dessert recipes, but it takes longer to cook than apples, and stays crisper when cooked. Each chayote has 5 g net carbs.

Carbquick faux apple cobbler.

1 cup Carbquik
1 cup vanilla almond milk (unsweetened)
1 tsp cinnamon (or more, to taste)
1⁄2 teaspoon nutmeg
1⁄2 cup butter, melted
sweetener of choice equal to 1 cup sugar
3 or 4 chayote squash, depending on size, peeled and sliced 1/4" thick.
Mio Orchard Apple drink mix (2 or 3 good squirts), or powdered sugar-free apple cider drink mix.

Cook the squash with the cinnamon, nutmeg, apple drink mix and 3/4 cup sweetener on the stove or in the microwave until tender. (I use my instant pot.)

Preheat oven to 350.

Stir together Carbquik, almond milk and 1/4 cup sweetener
Stir in melted butter until blended.
Pour batter into 8x8 ungreased baking dish.

Spoon the cooked squash over the batter.

Bake about 45 minutes until golden. The batter will rise to the top to make the crust.

Optional: Sprinkle with Suchrin Gold

I used to make this in the crockpot for potlucks. Put it all in a 3 qt. crockpot, instead of a pan, and cook on high for two hours. The Suchrin Gold makes up for the crust not browning in the crockpot.

This sounds good, I love chayote for an apple stand-in!

I've made something very similar to this using a large, peeled and deseeded zucchini. It was really good too.
