Default Cauliflower Gratin

I found this recipe on the following blog "ibreatheimhungry" and I tried this tonight as an accompaniment to my steak and veg. It was delicious and a fantastic replacement for gratin dauphinois so I thought I'd share it:


Easy Cheesy Cauliflower Gratin Recipe (Low Carb and Gluten Free)
Yield: 6 servings

Serving Size: approximately 3/4 cup

A simple, yet delicious, low carb side dish recipe.

Ingredients

4 cups raw cauliflower florets
4 Tbsp butter
1/3 cup heavy whipping cream
salt and pepper to taste
6 deli slices pepper jack cheese
Instructions

In a microwave safe dish, combine the cauliflower, butter, cream, salt and pepper and mix thoroughly. Microwave on high for about 25 minutes, or until tender.

Remove from the microwave and mash with a fork or potato masher. Taste and season with more salt or pepper if necessary. Lay the slices of cheese across the top of the cauliflower. Microwave for another 2- 3 minutes or until the cheese has melted. Serve hot!

Approximate nutrition info per serving:
215 calories, 19g fat, 2g net carbs, 6g protein

I've never cooked cauliflower in the microwave. Are you sure the time is right? It takes less than 10 minutes to steam cauliflower on top of the stove.

I personally halved the amount and microwaved it for 10 mins and it was done but yes, that's exactly what the recipe states you can see the original recipe by clicking on the link at the bottom. Sorry I've never steamed cauliflower so I'm not sure on that side.
