Something I just found and tried:

2 minute low carb muffin:

1/4 cup flax meal
1 egg
1/2 tsp baking powder
1 tsp coconut oil
1/4 tsp stevia powder (optional - I don't use it)

Mix all ingredients well in a coffee cup or small pyrex dish and microwave on high for one minute - done.

Total carbs less than 10. I would eat half one day and save half. When fresh its very moist, when cooled its more like bread.

Supposed to be lots of health benefits in flax seeds.

Awesome thread! I'm about to start low carbing and was trying to figure out what lunch options I could do for work.

I too like the crock pot..but I usually run it over nite for am.

I usually bake/cook a large batch and eat over several days, kids eat this too. THen put left overs into a small container to freeze. THen anyone can pull out and defrost and eat asap.

Especially large cuts work well in crock pot and are less pricy per pound. ie pork butt + jarred sauce or pkt ( check for sugar/carb count before purchase)

I learned to tolerate wilted salads. Adding Italian salad dressing to salad greens before heading off to work. THese days I often add the dressing to a large container of greens to have the vinegar hold the greens longer that freshness date. AN oil/vinegar type , not a creamy type.

I often wilt them completely by throwing them in when I warm up my food on the stove or in the microwave. Heated salad seems to have more flavour.
