Thumbs up Scrumptious Salad

I made up a great salad tonight (at least I thought it was yummy)...

Salad
1 heart of romaine, chopped into bite-size pieces (I use a plastic knife to keep it from browning)
4 oz. goat cheese w. herbs, crumbled (YUM!!)
1 roma tomato, chopped
1 small onion, sliced thin
Dressing (actually, this made a little too much, but I saved the rest)
2 oz. red wine vinegar
4 oz. olive oil
1/2 t. garlic powder
1/2 t. oregano
1/2 t. basil
1/2 t. salt
1/2 t. pepper
1/2 T. splenda

Whisk salad dressing ingredients together. Toss all salad ingredients in a bowl with homemade italian dressing. I had about 1/4 of the salad, topped with about 1-2 T. sunflower seeds. Gosh, was it ever yummy!!!! I would highly recommend this. First, I think salad tastes so good when you toss the salad with the dressing...especially the next day. Second, this was my first taste of goat cheese, and it was great. Similar to bleu cheese, although not as strong of a flavor.

Anyhow, just wanted to share (this went with the remainder of my chicken enchilada casserole), and now I have salad for the next day or two (unless I eat it all tonight!!!)

Amy
