Default roasted duck legs

I've been buying these fresh or frozen from a local meat shop, they're divine!

Some of the cooking methods I've tried haven't worked so well though: if the oven temp is too high there will be too much fat splattering and it will start to smoke.

So I turn the oven to 275, put one or two duck legs in a pan seasoned with a little s&p, and roast for a couple of hours (depends on how big the legs are). They get wonderfully crispy and succulent. If they're overcooked they will dry out a bit though so it's good to keep an eye on them.

I serve the roasted duck leg on top of spinach or arugula, or just have it plain. Sometimes I add some finely diced golden beets, celery, and mushrooms during the last half-hour of roasting.
