Question Protein Power "Ice Cream" Recipe Please!

I was talking to a couple who had lost much weight and averted diabetes(him) and they were telling me about the Protein Power Ice Cream. Atkins ice cream is a little to custardy for the family and would love to provide a good substitute for Dreyers! Anyone? Anyone?

Hello,

Not sure if you found what you were looking for, I located the following in the "sweets" section of the recipes forums:

CHOCOLATE ICE CREAM (4 carbs per serv.)
1 cup heavy cream
1/2 packet gelatin softened in 1 1/2 tablespoons cold water
1/4 tsp vanilla
1 tblspoon Splenda
1 pinch cocoa

*sprinkle gelatin over cold water and let soften
*in pot combine cream, vanilla, splenda, and cocoa, heating to a gentle boil
*add gelatin and stir into cream mixture until completely dissolved.
*pour mixture into lightly greased muffin tins
*chill for at least 3 hours in fridge
* when set, put muffin tin on a cookie sheet filled with 1 inch very hot water (this will loosen the icecream) for about 20 seconds
*invert onto plate or into bowl, top with sugar free syrup or whip cream

very yummy !
