Default Sardines in garlic, herbs, tomatoes and olive oil

I usually make this with fresh sardines, but was pleasantly surprised to find that it's not too bad with canned sardines.

This serves 1

approximately 80-100g of drained canned sardines
2-3 tsp. herbs - choose from oregano, marjoram, rosemary, Provencal,Italian etc.
1 tomato - sliced
olive oil - really good quality oil for serving
2 cloves of squashed or chopped garlic

First, drain the sardines, split them and remove the bones (optional).
Put a little oil in a frying pan with the garlic and some herbs and fry very gently until cooked. Add the sardines, sliced tomatoes and more herbs and fry them gently in the oil for several minutes, turning carefully mid-way with a fish-slice. Serve with extra good quality olive oil poured over them.

If you make this with fresh, raw sardines, just add them to the pan at the same time as the garlic and herbs, and don't add the extra oil at the end.

carbs : 8.6 g
protein: 26g
fat: 39g
fibre 2g
cals: 486

hehehe. I (used to) hate canned sardines too, but I buy them because they're good for me, then they (used to) sit reproachfully month after month, until a hungry friend put them out of their misery and had them on toast.. lol. Not now.. I cannot wait to buy more.

I went through a major canned sardine kick last month. I love them!! Two cans with chopped cucumbers, tomatoes, and sliced scallions is a great lunch.

I had some sardines on my salad and I liked it. Well... I didn't hate it at least. I'll definitely give this a try.

I have been searching for natural sources of potassium and this recipe fits the bill.

Both sardines and tomatoes are rich sources and this recipe sounds delish to boot!
