Does anyone have a low carb recipe for fried okra. I thought about breading it with crushed pork rinds?

I bread my okra with Dr. Atkins low carb cornbread muffin mix. I just wish they wouldn't put so much splenda in it. It makes the fried okra a little sweet.

I take and spread frozen okra on a cookie sheet and salt and pepper it. Then I broil it until crispy, turning once. It only takes a few minutes.
