Default Vegetables at breakfast

I love vegetables at lunch and dinner. But I'm having a hard time getting excited about them at breakfast. I can saute some for my eggs, but I don't like having eggs every day. Any ideas? Thanks!

I eat raw carrots at breakfast. To me they are kind of sweet, and a good breakfast veggie.

What about having leftover protein from dinner? Eat it cold on whole grain bread/crackers (with some mayo or butter) and add tomatoes or raw colored peppers or cucumbers. Quick and easy! You can also go to a deli and buy roast beef or other cold cuts there, just make sure, there's no MSG or sugar added.

I looked back at the menu plans in "The Program" and there are days where Dr. S. suggests oatmeal or other cereal for bfast, with some nuts and hard-boiled egg. Or cottage cheese and toast w/almond butter, etc. See p. 206-207 of the book.

I eat oatmeal almost every day (I know, I should vary it more...I do have eggs occasionally ) and I have a scoop of whey protein in a cup of water with it. That and my one cup (a day) of 1/4 caf coffee with 1 T of cream. I usually use the steel-cut oats, but if I'm short on time, I use the non-instant rolled oats.

If you hate veg for breakfast, don't let that stop you from following everything else. 90% of a great plan is better than 100% of a plan that will harm you.

I bought some frozen, pre-cut tri-colored organic peppers. I throw some in a bowl with my frozen chicken and apple breakfast sausage (organic) and microwave them. Alongside some oatmeal or an apple with almond butter, it works.

But I get very tired of it by Wednesday or Thursday. I'd love some new ideas, too.

I like fresh peppers (one), cucumbers (half or third, depending on size, unpeeled) or radishes (about a cup) to crunch on for breakfast. (I eat the veg with a couple of oatcakes and cheese or peanut butter or ham; occasionally seedy porridge.) Add one day of celery and one of tomatoes, and the working week's covered. Then for the weekend I like scrambled eggs with sauteed spinach and mushroom, or asparagus omelette.

Sometimes I eat leftovers such as cauli-broccoli cheese or creamy green beans for breakfast too.

I should add that I'm not strictly following the SP, but have been strongly influenced by it - and eating veggies at every meal is the best thing I picked up from it!

One breakfast that I like (not that I'm following SP lately, but it still works--and it seems to be popular here in Bavaria) is slices of cheese, or coldcuts wrapped around vegetable slices like cucumber, sweet peppers and tomato--sometimes I throw in a little cream cheese--they always have them at hotel buffets (to be eaten with bread) and I occasionally eat them at home as well--I generally leave off the bread, or have wasa bread with them if there is any.
It's a good alternative to eggs...
