Default Replacing salad with less quantities of higher carb greens?

Hi people.

I have pointed out quite a few times before that i hate salad. After trying my hardest to incorporate it, that hasnt changed. I was wondering what the best idea would be to replace them.

Could i literally eat peas/cabbage/sprouts/green beans/mushrooms/broccoli (which i do like) instead of salad greens (while still aiming for 20g of carbs per day) ??? I appreciate that they do have more carbs than salad, but i am prepared to sacrifice quantity for something that i can eat without retching.

Obviously i will get less "bang for my buck" (as DA puts it), but is this acceptable, and if not, why not?

According to my packet of peas in the freezer, they are not THAT high in carbs. Obviously i will have to eat a small quantity of them, but what do they contain that is that bad?

I love salad, but I gotta mix things up... and i stir-fried some snowpeas last week that came out AMAZING. If snow-peas are really unkosher for us newbies, I'll be so disappointed...

Anyone have a good recipe for LC Cole Slaw?

Peas are bad because they're high glycemic-index, which means what carbs there are in there are rapidly converted to glucose.
Sprouts, beans, broccoli, cabbage, mushrooms are all good! By all means eat those instead of salad if you like them. I recommend cauliflower too...

Peas have a higher glycemic value thus for some, could pose a problem despite the "not so high" carb count. Same goes with carrots. Some eat them with no problem...I am one of those lucky ones but I must limit my consumption to 1/4 cup in 24 hour period of either.

Asparagus, broccoli, spinach, kale, turnip greans, cabbage, zuchinni....all great veggies to eat that are low in carbs.

As for substituting...I have days I eat only veggies and no salad and thus far has not hurt me but I love my salad and eat it 5/7 days.

Re: Cole Slaw

Shredded cabbage
Shredded onion
Mayo
Splenda
Lemon juice
Salt & Pepper

I just toss these ingredients together - - chill for at least 3 hours. You must chill for the ingredients to meld together. I have also substituted Ranch or Caesar dressing (over the cabbage/onion mix & lemon juice mix).

Oh of course! The glycemic index. I really should read DANDR again. That whole chapter has been erased from my memory somehow

According to my DANDR, if you're in Induction, you can have all of those veggies EXCEPT peas. Peas are considered a Starchy Vegetable (which are not allowed until the 8th rung of the OWL ladder or Pre-maintenance).

Mushrooms - you're allowed up to 3 cups of these because they're listed on the Salad Vegetable list.

If you only have up to 2 cups of salad vegetables (including mushrooms) then you could have up to 1 cup of the Other Vegetables. The Other Vegetable list includes cabbage, bean and brussel sprouts (you didn't say which kind of sprout), string beans (which are the same thing as green beans I think), and brocolli. Even if you don't eat any mushrooms, I think you'd still only be allowed 1 cup of the others but I'm not sure about this.

Im just going to add another 2 cents

I have rarely measured my veggies as long as I ate the veggies listed on "the list". I found that I lost quicker when I ate more veggies/salads than protein. But that's me.
