Default Chicken and green beans in SPICY oil

Simple and delicious!

2lb boneless chicken (thighs or breasts), cut into small pieces
1/2 lb fresh green beans (or chinese long beans), trimmed and cut in half if long
4T. (or more if you like) bacon grease (you could use oil, but it won't taste as good)
2T. (or to taste) Sriracha hot sauce (you could use another type of hot sauce, but I think Sriracha works best. Available at Asian markets or in the Asian aisle at your grocery)
Salt to taste

Heat half the bacon grease in a large skillet until very hot. Season chicken chunks with salt and saute until cooked through. Remove from pan. Heat remaining grease until very hot and add beans. Saute until beans begin to shrivel and brown in spots, 5 mins or so. Return chicken and accumulated juices to pan, add hot sauce, stir to combine and cook a minute more. Serve. The only carbs in this are in the beans and maybe a gram or two in the hot sauce. Definitely better with thighs than breasts!

Hi!
this sounds great we LOVE spicy food in our house the hotter the better.
Have you found the Sriracha hot sauce affecting your loss at all? I have a HUGE bottle of this in the fridge and drool every time DH uses it but mine has sugar in the ingredients, so I've refrained.

Mine has sugar in the ingredients too - I just figured that since it's only 1g carb per teaspoon and I don't really use much, it probably wouldn't be a big deal. However, I am in the middle of the stall to end all stalls (no loss since Thanksgiving), so maybe I should pay a little more attention to hot sauce. It has never knocked me out of ketosis, though.

I make a chili paste with serrano chilis, olive oil salt and a little splenda just grind it all together. Serranos I think have some of the lowest carbs.
And their HOT!! You can add this to anything...I may try it with bacon fat however!

I tried this last night. It was delicious. I used Franks Hot Sauce though.
